Zero Waste Lab: Innovations in bespoke bioceramics and food technology


On Monday 29th September 2025, STOIC Foundation hosted Zero Waste Lab event at Watermark Restaurant, in partnership with Plat Institute and with the generous support of Café Deco Group.

Our purpose for this event was to further our mission of catalysing impactful collaborations that support environmental resilience and circular economy solutions across industries. By leveraging research, technological innovation, and multi-sector partnerships, STOIC Foundation aims to address critical waste challenges and accelerate the transition to a sustainable future marked by transparency, integrity, and pragmatic action.

In collaboration with Plat Institute, Zero Waste Lab showcases how commonly discarded materials—including coffee grounds, orange peels, and oyster shells—can be transformed into refined, functional bespoke bioceramic products through innovative food technology applications. A highlight of the event was a live 3D printing demonstration, where Plat Institute showcased the adaptation of sustainable materials for bespoke ceramic design and scalable production, illustrating the intersection of food technology and advanced material sciences.

In addition to demonstrating technical advancements, Plat Institute provided an overview of their methodology and sustainability objectives, which closely align with STOIC Foundation’s emphasis on robust, verifiable approaches to waste reduction and responsible resource management.

Apart from sustainability, Plat Institute also leads in gastronomic sensory innovation, blending food design, technology, and multi-sensory experiences to redefine how we perceive taste and aroma. For this event, we were pleased to invite special guest Antonio Lai, a renowned mixologist and co-owner of Tastings Group, who presented a series of exclusive cocktails. Throughout the evening, Antonio Lai showcased Plat Institute’s cutting-edge Mist technology, which transforms fragrances into a visible condensed haze as well as another innovative device that produces edible flavour-filled bubbles to accompany custom cocktails, providing guests with a dynamic, multi-sensory tasting experience.
